Thai Peanut Pasta

Since we were talking about the Cheesecake Factory earlier this week, I thought I’d share our homemade (and somewhat healthier) version of our favorite dish from there. The Cheesecake Factory makes this with chicken breast, which you can throw in too if you like ๐Ÿ™‚

Ingredients

  • 1 package whole wheat linguine pasta
  • 1 cup julienned carrots
  • 3 scallions, sliced
  • 1 cup bean sprouts
  • 1/2 cup chopped roasted peanuts

Sauce

  • 1 cup peanut butter
  • 4 tablespoons soy sauce
  • 1/2 cup almond milk, or to desired consistency
  • 2 tablespoons olive oil
  • 1 tablespoon ground ginger
  • 1/2 teaspoon cayenne powder
Cook linguine. While cooking, whisk together sauce in saucepan over medium-low heat. Drain pasta, then toss with carrots and scallions. Toss pasta mixture with dressing. Top with bean sprouts & chopped peanuts & serve. Makes 6 generous servings.

    How many servings is this? Seem like it would be quite a few… How many ounces of pasta?

      We use a whole package of linguine, so 16 oz. It makes at least 6 big servings, depending on portion size. I’ll update the recipe with that too ๐Ÿ™‚
