Summer Oatmeal
Oatmeal does not feel especially “summery” to me, being hot & all, but this recipe is a perfect update to keep it in the breakfast rotation all year round. It’s cool and refreshing, filling, and best of all you mix it up before bedtime so it’s 100% ready to eat as soon as you’re up in the morning.
Ingredients
- 2 cups rolled oats
- 1/3 cup raw sunflower seeds (this is optional, but I’ve been throwing it in looking for more iron in my foods)
- 3 cups unsweetened almond milk
- 1 tsp vanilla
- 2 Tbsp maple syrup
- Blueberries & chopped strawberries (about 1/3 cup each. Any other berry would work in this too.)
Mix everything together. Cover and refrigerate overnight. In the morning, spoon into bowls and serve! Makes 3-4 servings.
The kids get so excited when I say we can make it at night, it’s a new favorite for everyone – even Daddy likes to too:)
