Pumpkin Muffins

We have tested & tweaked 5 times this season to bring you this rendition, which is, in my humble opinion, perfectly scrumptious 🙂

Ingredients:

  • 2 cups whole wheat pastry flour
  • 1 Tbsp baking powder
  • ¼ teaspoon baking soda
  • 1 Tbsp cinnamon
  • 1 teaspoon nutmeg
  • ½ teaspoon ginger
  • ½ teaspoon salt
  • ¼ cup olive oil
  • ½ cup honey
  • ½ cup pure maple syrup
  • ½ cup almond milk
  • 2 eggs, beaten
  • 1 cup (about half a can) pumpkin

Mix dry ingredients. Add wet ingredients & mix thoroughly. Spoon batter into oiled muffin tins & bake 17 minutes at 375 degrees. Makes about 16 muffins.
