Pumpkin Muffins
We have tested & tweaked 5 times this season to bring you this rendition, which is, in my humble opinion, perfectly scrumptious 🙂
Ingredients:
- 2 cups whole wheat pastry flour
- 1 Tbsp baking powder
- ¼ teaspoon baking soda
- 1 Tbsp cinnamon
- 1 teaspoon nutmeg
- ½ teaspoon ginger
- ½ teaspoon salt
- ¼ cup olive oil
- ½ cup honey
- ½ cup pure maple syrup
- ½ cup almond milk
- 2 eggs, beaten
- 1 cup (about half a can) pumpkin
Mix dry ingredients. Add wet ingredients & mix thoroughly. Spoon batter into oiled muffin tins &Â bake 17 minutes at 375 degrees. Makes about 16 muffins.
