Chicken Marsala
This is one of our favorite meals – it’s one of the things we make at home & I feel like tastes as good as anything we’d get in a restaurant. Plus it’s pretty easy – the hardest part of the meal is making mashed potatoes 😉
Chicken Marsala
- 2 chicken breasts, spliced lengthwise (so it makes like 4 thin breasts)
- flour
- salt & pepper
- 1 package fresh mushrooms
- 1 Tbsp butter
- 1 cup marsala wine
- 1 cup chicken broth
- 1/4 cup almond milk
- corn starch
Sauté mushrooms in butter. Add marsala, broth, & almond milk, and simmer several minutes. Mix 1 tbsp corn starch in 1/4 cup water & stir into sauce mixture. Simmer until thick (add in another 1/2-1 tbsp corn starch mixed in water if necessary for desired thickness.)
While preparing sauce, coat chicken breast in flour with salt & pepper on both sides. Cook on oiled surface, flipping halfway through until both sides are done (we use our cast iron griddle that we cook everything on.) I like to serve this with mashed potatoes & roasted broccoli (drizzle fresh broccoli with oil & sprinkle with salt, roast about 10 minutes at 400 degrees.)Spoon sauce over potatoes & chicken breast, & serve with broccoli – delicious!
This feeds 2 adults & 2 kids in our house, so adjust your quantities if necessary. Enjoy 🙂
