Shown with garlic green beans & extra special fish-dipping-sauce (mayo+ketchup.)
This fish tastes fried but is not fried, which is basically awesome. The taste reminds me of fish sticks, which I loved growing up 🙂
- 1 egg
- 2 tablespoons mayo
- 2 cups panko bread crumbs
- 4 cod fillets (thawed)
- Salt & pepper
- Olive oil
Absorb moisture from cod fillets with towel. Set up 3 bowls – first with flour, second with egg & mayo mixture, & third with panko & salt & pepper.
Coat each cod piece with flour, & then mayo/egg mixture, & then panko. Place on hot, oiled baking sheet.
Bake on top rack of over about 8 minutes at 450. Flip and cook another 8 minutes.
