Pancakes

One of our favorite things to do on a Saturday morning is lounge around in pajamas with nowhere we need to be & make a batch of pancakes. These are whole grain & have no sugar or dairy. Serve with pure maple syrup for a scrumptious breakfast any day 🙂

Ingredients:

  • 1 ¼ cup whole wheat pastry flour (whole wheat works too)
  • 1 Tbsp baking powder
  • 3 Tbsp honey
  • ¾ tsp sea salt
  • 2 eggs, beaten
  • 1 ¼ cup almond milk
  • 3 Tbsp olive oil

Heat your skillet or griddle (we got this cast iron one at Kohls 2 months ago & LOVE how it works – plus cast iron means no chemicals, unlike non-stick griddles.) Mix ingredients & ladle batter onto cooking surface, flipping when golden brown. Makes 2-4 servings, depending on how many pancakes you like 🙂

Optional: add blueberries.
